Sustainability is at the heart of  The Hightown Inn

It signifies that sustainability is not just a component but the fundamental base of everything we do.

We are dedicated to using fresh, responsibly sourced ingredients, with many coming from nearby, reducing food miles. All our meat comes from trusted suppliers in the North West, focusing on native breeds that thrive in our climate and are grass-fed for sustainability.

We’re fortunate to access some of the world’s best fishing grounds, including Peterhead and Fraserburgh, known for their Hake, Halibut, Haddock, and Cod. In summer, we also offer local catches like Sea Bass from Liverpool Bay.

Our shellfish is equally exceptional, featuring hand-dived Scallops from Loch Fyne and live Crabs and Lobsters from Cornwall and Scotland. We prioritise sourcing from British waters to ensure traceability and ethical practices.

An on-site market garden where we grow all our herbs that are used across all our menus.
